The Fusion of Gizdodo Chicken Gizzard and Fried Plantain

Gizdodo is a popular dish in Nigerian homes and parties. You might not know this, but I’m from Nigeria. We usually serve Gizdodo with rice dishes, which is also perfect as small chops, snacks, lunch for kids, or as a starter at Nigerian gatherings or houses.

So what is DODO (fried plantain) exactly? Plantain is one Nigerian food that you can never be bored with cooking in the kitchen. It can be eaten unripe, ripe, or overripe. It can also be fried, boiled, roasted, or grilled. When fried, the edges caramelize and become crispy, just like the edges of pancakes cooked in butter. I love it even more when it’s either fried or grilled. And it can also be served as a main side dish for Nigerian rice or beans recipes. Now, it may not be your regular banana, as it has a stronger taste and slightly different color. But it can be eaten in countless ways.

For those residing in the UAE, you can get the plantain in any grocery store. It’s mostly written in markets like Lulu as Banana India (Nendra) or big banana, anywhere else.

Now, what is GIZ (chicken gizzard)? It’s one of the most nutritious parts of the chicken. It’s high in protein, despite the prominence of other poultry meat selections. It’s so high that one cup of gizzard meat can satisfy up to 88% of your daily recommended value of protein. Apart from that, gizzard meat is low in fat and high in vitamins.

If you haven’t tried Gizdodo yet, then you’ve been missing out. But that’s why I’m here! We can start cooking this yummy recipe by preparing the ingredients mentioned below (watch the video to know the entire process).

INGREDIENTS:

2 Ripe plantains (use as much as you want)

2 450 grams of Gizzard (use 1 or as much as you want, but make sure it’s the same quantity as the plantain. I used 450 grams because I love chicken gizzards)

Tomatoes (used the chopped ones from the can because I couldn’t find Scotch bonnet pepper to blend normal tomato with. But the outcome tasted the same)

Chili pepper (normally you should use Scotch bonnet and blend it with the tomatoes. But since it’s hard to source Scotch bonnet in the UAE, I use chill pepper instead, and mix it with diced tomatoes)

1 large onion, sliced and chopped.

1/2 green and red bell pepper, chopped (add yellow and orange bell pepper if you have it)

1 tablespoon ginger (you can use minced if you prefer)

1 tablespoon garlic (use gloves if you prefer)

Olive, vegetable or sunflower oil

2 Bullion cubes (I used 1 Knorr and 1 Maggi chicken stock)

1 tablespoon curry powder

1 tablespoon each of your preferred seasoning/spices (to those who love some added spice)

1/2 teaspoon thyme

Carrot (optional)

Onion powder (added some as I’m obsessed with it)

Salt to taste
